The bottle our family keeps on the table every day. Pressed from Biancolilla and Nocellara olives grown on our own trees in Cicala and Trappeto, Partinico, it carries the peppery, grassy character of a genuine western Sicilian oil. Bottled in dark green glass, which helps protect the oil better than clear bottles, and shipped in small batches so it reaches you close to the day it was pressed.

Flavour profile
Medium-bodied with a fresh, grassy opening, notes of artichoke and green almond, and a peppery finish that catches gently at the back of the throat — a sign of the polyphenols that come from an early harvest.
Harvest
Hand and rake-harvested in western Sicily between late October and November, while the olives are still turning from green to violet — earlier than most commercial oil, which favours yield over flavour.
Production
Milled within hours of picking using a cold-extraction process below 27°C, which preserves the oil's aroma, flavour and natural antioxidants. Nothing is added and nothing is filtered out beyond what settles naturally.

Storage
Store in a cool, dark place away from direct sunlight and heat. Our dark green glass bottle also helps protect the oil better than clear bottles. Once opened, use within a few months for the best flavour.
