The olive varieties
behind the oil.

Every bottle is a blend of two native Sicilian cultivars, each grown on our own land and each bringing something different to the glass — much like grape varieties in wine.

Biancolilla

Native to western Sicily — Palermo, Agrigento and Trapani

The gentlest of Sicily's great cultivars. Pale-skinned and self-fertile, it yields a delicate, almond-scented oil with soft grassy and wildflower aromas, a whisper of bitterness and only a light pepper on the finish.

Best with: Fish, vegetables, mayonnaise and emulsions, and traditional Sicilian almond pastries.

Nocellara

Grown across the Belice Valley of south-western Sicily

A dual-purpose olive, prized both as a table olive and for oil. Its extra virgin oil is fuller and greener, with herbaceous, tomato-leaf and artichoke notes, moderate bitterness and a clean, peppery finish.

Best with: Red meat, bruschetta, robust pasta sauces and aged cheeses — where you want the oil to be felt.

The Sicily Olive Co. is run by Al and Desiré, who built the brand around their own family's land and generations of olive-growing heritage in western Sicily — honest provenance, careful cultivation, and the generous rituals of the Mediterranean table.

A blend of Biancolilla and Nocellara olives, both cultivated on our own trees.

Yes. It's cold-extracted, unfiltered beyond what settles naturally, and genuinely extra virgin.

Between late October and November, earlier than much commercial oil, to favour flavour and polyphenol content over yield.

In a cool, dark place away from direct sunlight and heat. Our dark green glass bottle also helps protect the oil better than clear bottles, and the 5 litre tin protects it from light particularly well.

Best within 18 months for peak potency, and fully safe and usable up to 24 months.
